Kofta is a family of meatball or meatloaf dishes found in South Asian, Middle Eastern, Balkan, and Central Asian cuisine.
Ingredients
450 g mutton, with no fat2 green onions, finely chopped
1 1/2 cups yogurt
1 dessertspoon ground almonds
1 dessertspoon oil
2 to 3 garlic cloves
Juice of 1 whole fresh lime
1 dessertspoon curry powder
1/4 dessertspoon ground black pepper powder
1/2 teaspoon turmeric powder
1 to 2 dessertspoons fresh mint leaves, chopped
Directions:
Cut mutton into tiny pieces and put in the food processor along with the chopped green onions and mix till well combined. You should do it in a way that you can shape the soft and consistent mixture in your palms. In a mixing bowl, mix well yogurt, powdered almonds, oil, chopped garlic, fresh lime juice, chopped mint leaves and sprinkle with curry powder, chili or pepper powder and turmeric. Stir well with a fork.Take a larger mixing bowl and put the mutton mixture and mix finely with the rest of ingredients. Knead well with your palm and then form into small meatballs. Put the meatballs ( Kufta) in a Pyrex dish and cover. Keep in the fridge 8 to 10 hours straight.
Put the balls in a proper dish and lay in the oven at low heat for 15 to 20 minutes .
Alternatively, you can put Kuftas onto wooden skewers and grill in the oven for five minutes.
